Glace Icing

3 cups icing sugar
10g butter, softened
1 Tblsp milk

Combine the icing sugar mixture & butter in a medium heatproof bowl. Gradually add the milk, stirring with a wooden spoon until a firm paste forms. Place the bowl over a saucepan half-filled with simmering water. Stir over low heat for 5 minutes or until sugar dissolves & icing is runny. Remove from heat.
 
Spoon icing over cupcakes as directed.

White Chocolate Frosting:

1 cup white chocolate, coarsely chopped
1/2 cup whipped cream
1/3 cup butter

Meanwhile, to make the frosting, place the chocolate, cream & butter in a small saucepan over medium-low heat & stir with a metal spoon until the chocolate melts & the mixture is smooth. Transfer to a bowl. Place in the fridge for 1 hour to chill. Use an electric beater to beat the chocolate mixture until pale & creamy.

Spread frosting over cupcakes as directed.
