Pink & Silver Cupcakes

It's Pink Ribbon Day today so help raise awareness & funds to fight breast cancer by hosting a morning tea & serving up these delicious cupcakes.


1/2 cup butter
3/4 cup sugar
2 eggs
1 1/2 cups self-raising flour
1/2 cup milk
2-3 drops red liquid food coloring
Silver balls (for decoration)

Pink Icing:

2 cups icing sugar
1 Tblsp water
3-4 drops red liquid food coloring

Preheat oven to 350°F. Line 20  1/3 cup capacity muffin pans with silver paper baking cups.

Use an electric beater to beat together the butter & sugar in a large bowl until pale & creamy. Add the eggs, 1 at a time, beating well after each addition, until combined. Stir in the flour, milk & red food coloring until just combined.

Spoon the mixture evenly among the prepared pans. Bake in preheated oven for 15 minutes or until a toothpick inserted into the centres comes out clean. Remove from oven. Turn onto a wire rack & set aside for 30 minutes to cool.

To Make Pink Icing:

Combine the icing sugar, water & red food coloring in a medium bowl, & stir until a smooth paste forms.
Spoon the icing over the cupcakes; sprinkle with silver balls. Set aside for 10 minutes to set.
