Orange, Passionfruit & Yogurt Cupcakes

These deliciously moist cupcakes are pure temptation!

1/2 cup unsalted softened butter
3/4 cup sugar
1 1/2 Tblsps  finely grated orange rind
2 eggs
1/4 cup fresh orange juice
2 passionfruits, pulp reserved
2/3 cup Greek-style yogurt
1 1/3 cups sifted self-raising flour
1/2 tsp baking powder

Preheat oven to 350°F. Using electric beaters, beat butter, sugar & orange rind in a large bowl for 4-5 minutes or until light & fluffy. Gradually add eggs, & beat until well combined.

Using a large metal spoon, fold through orange juice, the passionfruit pulp, yogurt, flour & baking powder until just combined.

Spoon the cake mixture into small paper baking cups. Bake for 15-20 minutes or until golden & a toothpick inserted into the centre of a cupcake comes out clean. Remove from oven. Serve warm.

Makes 12 cupcakes.
