Mini Triple Chocolate Cupcakes

1/2 quantity Basic Cupcakes, using only 2 eggs (see related recipe)
1/3 cup white chocolate chips
white chocolate shavings (for decoration)

Chocolate Ganache

1/3 cup dark chocolate, chopped
2 Tblsps pure cream

Preheat oven to 350°F oven. Line two 12-hole, 1 tablespoon-capacity mini muffin pans with paper baking cups. Make Basic Cupcakes (see related recipe) , stirring in chocolate chips with flour.

To Make Chocolate Ganache:

Place chocolate & cream in a heatproof, microwave-safe bowl. Cook on high (100%) for 2 to 3 minutes or until smooth & combined, stirring every 30 seconds with a metal spoon. Stand at room temperature for 5 minutes or until mixture is a spreadable consistency.

Spread ganache over each cupcake. Top with chocolate shavings. Serve.

For 1 tablespoon-capacity mini muffin pans use 1 tablespoon mixture. Bake for 10 to 12 minutes.

Let stand in pans for 2 minutes. Transfer to a wire rack to cool.

Makes 24 mini cupcakes.
